There has been a buzz in the community about the new restaurant that appears to be opening where Don Chacho’s used to be. To clear up the speculations, this morning, I stopped in for a chat with Fabrizio Truschi, the manager of Todo al Carbon.
Todo al Carbon, opening at the end of this month, is a new grill restaurant serving International cuisine with the friendly flair of an Italian trattoria.
Amidst a flurry of construction focused on the upcoming deadline, Fabrizio took the time out to sit on a cement garden seat kindly provided by Centrdo de jardine, to answer questions. The past owner of 2 trattorias in Plaza del Santo in Florence, Italy, Fabrizio brings the casual style of an Italian café to Coronado.
Todo al Carbon will be serving a variety of grilled dishes of fish, poultry, beef and pork. Restaurant patrons will receive a small serving of minestrone soup as a beginning to every meal. The facilities will have an air conditioned interior, with garden and patio seating for guests who would prefer to dine outside. The outside bar will serve alcoholic beverages as well as natural fresh fruit drinks.
Clients who place take-out orders will be able to enjoy a drink on the patio while they wait for their orders.
“Vegetarians will not be disappointed”, says Fabrizio. Our Minestrone soup, a specialty, is entirely vegetarian without any base of chicken or beef stock. “We will also have other options for vegetarians to enjoy”.
For deserts you can expect natural fruits, tiramisu, panacota and flan. You can look forward to house made Italian ice cream in the future. “We have ordered a Carpigiani Ice Cream machine from Italy. When it arrives, we will be serving home made ice cream made with fresh tropical fruits that are in season. We also want to serve chocolate ice cream made with natural coco and nuts.”
Todo al Carbon will be open for breakfast from 7:30 -11am. They will close for an hour to prepare for the next shift and reopen for lunch and dinner from 12pm – 12am. People can stop by late for some sangria.
The restaurant will be closed on Mondays for now. “If the demand is there, we will hire another shift and stay open 7 days a week”.
Fabrizio Truschi, who owns a small share of the restaurant with Javier and Patrizai Grimaldo, has traveled to Panama for the past 11 years, and is now living here.
Located adjacent to Centrdo de jardine, a garden store specializing in landscaping projects, Todo al Carbon (Telephone: 240-4076) is on the main road into Coronado and will be opening its doors to customers on January 31, 2008.
