Potato Stuffed Grilled Bell Peppers PDF Print E-mail

These are a great substitute for the same old boring potatoes!! Potato stuffed peppers

 

 

 

 

 

4 baking potatoes
4 large red peppers
1 16oz sour cream
1/2 C Shredded Gouda
1/4 C Sliced Green Onions
3T Butter
3T Chopped Parsley
3/4t Salt
1/2t pepper
1/4t paprika

1. Bake Potatoes at 450 degrees for an hour-let cool
2. Cut bell peppers in half. Keep stems in tact and remove seeds and membranes. Pat Dry. Set aside
3. Cut potatoes in half and scoop out the pulp.
4. Add sour cream and next 6 ingredients to the pulp.
5. Blend with fork
6. Spoon mixture into bell pepper halves and sprinkle with paprika
7. Grill peppers-cover with lid over medium/high heat for ~18 minutes or until peppers are blistered and potato mixture bubbles around edges.Â

8. Serve immediately.Â
