MEXICAN BAKED POTATO WITH SALSA AND GUACAMOLE PDF Print E-mail

Goes great with Ginger Pork, another QUICK AND EASY

 

 


 

Ingredients: 

    6 medium sized washed potatoes
    300g dip jar guacamole
    300g dip jar char grilled chunky salsa
    6 rashers bacon, chopped
    1 cup grated tasty cheese

How to do:

    Preheat oven to 200degree Celsius (400 F).
    Cut a cross in the top of each potato and place in oven.
    Bake for 30-35 minutes, or until tender.
    Cook bacon in a non stick pan until crisp.
    Heat the chunky salsa.
    Open the potatoes and top with cheese first (that the
    Cheese can melt in), the hot salsa, guacamole and bacon.
 

Serving: 

   Serve on a bed of spinach (or similar greens).
    It is a great light meal, or a side dish for grilled meat.
 
Tip:

  
 You can make your own guacamole with guacamole
    Seasoning mix sachets and fresh avocados. Therefore use
    2 large firm ripe avocados and about 40g of seasoning mix.
    Mash the avocado flesh and combine with the mix.
